DEEP-FRYING AT HOME

Deep-frying produces a strong smell (and can create a bit of smoke), so to keep the odors (and smoke alarms) at bay, take these simple steps: open any windows in the kitchen; turn the stove fan on high; and cover the pot with a spatter guard. You might also want to keep a small fire extinguisher nearby in case of any flare-ups.

DISPOSING OF FRYING OIL

Even small quantities of oil can clog pipes, so never pour it down the drain. If there is just a little oil left in your skillet, soak it up with a few paper towels that you then drop into the trash can. If you have a large amount of used oil—say, a cup or two—you can pour it into a heatproof container with a tight lid and place it in the garbage. (Make sure the oil is cool before you transfer it from the pan.) If you place the container of oil in the freezer, it will help solidify the oil and eliminate the chance of its spilling while you throw it in the trash (this is also a technique that works well for the grease left in the skillet after frying bacon).
